Recipe Round Up: Labor Day Leftovers

Does anybody know what we actually celebrate on Labor Day? No school? No work? Picnics? If you’re a blind sheep like I am and obediently follow the herd to the next picnic or party regardless of what is being celebrated, you probably didn’t know that Peter J. McGuire, co-founder of the American Federation of Labor, was its creator. He stated that the holiday was created to honor those “who from rude nature have delved and carved all the grandeur we behold.” I’m not sure I fit into that category…but I plan on celebrating it anyway.

As for how to celebrate it, why, with picnics and the last of the summer harvest, of course! Most likely, your picnics and potlucks will be packed with hot dogs, hamburgers, corn on the cob and late summer pies. And more than likely, you’ll wind up with the leftovers. SKC has pulled together some recipes that use up the picnic recipes so you can have a Labor-less holiday week.

Alexia Detweiler is a freelance food writer based in Lancaster, Pa. She married her high school sweetheart in June 2011 and has been using him as a guinea pig for her cooking since.

Like bacon, pulled pork can be added to any dish to escalate it to VIP status: salads, slaws, quesadillas, mac-and-cheese. Check out these recipes for stretching that leftover pulled pork for the entire week long.

Leftover hamburger and hot dog buns but nothing to fill them with? Have no fear, you don’t have to start making grilled cheese on hot dog buns just yet. Check out these 7 recipes for using up leftover buns. You’ll be surprised by the breakfasts, appetizers, and even desserts that you can make with them.

There are so many things you can do with fresh corn off the cob. You can eat it hot or cold, sweet, spicy or savory. Here are two of our favorites: corn fritters and corn chowder.

Leave it to Rachel Ray to come up with a 30-minute recipe perfect for a college student’s appetite. Pop chunks of leftover hot dogs into homemade macaroni and cheese for a quick and inexpensive meal.

Your first thought might be to rid the house of all junk food after a party or picnic, but keep the potato chips! You can turn these greasy, crispy snacks into a crumbly pecan cookie (Remember pecan sandies?). Now what to do with leftover corn chips…

We love picnics and this year’s Labor Day was a perfect opportunity to go to our favorite High Park in Toronto and have a little fun with our children. But when we have a picnic in our own garden the dishes we serve are not only burgers or potato salads but I always try to use some gluten-free recipes, which many of my friends prefer and appreciate.
