Dining Hall DIY: Luck o’ the Irish Mashed Potatoes

Ah, potatoes. Something about them just screams comfort. Humble yet impressively versatile, as the Irish have demonstrated in their endless creativity with potato-inspired cuisine. From pub fries to colcannon, boxty (potato pancakes) to champ (mashed potatoes with scallions) - no part of the potato goes to waste. This St. Patty’s Day, honor the potato in your very own dining hall, by dressing it up with deep green veggies, roast pork, and a generous drizzle of golden honey.

**Recipe**

Luck o’ the Irish Mashed Potatoes
Serves 1

Ingredients
1 baked potato
1 tablespoon butter
1/4 cup milk
2 tablespoons sliced scallions
Pinch black pepper
Pinch salt
Steamed vegetables
1 slice roasted meat-pork or turkey work well
Drizzle of honey

Peel the potato and place in a small bowl. Add the butter and mash with the back of a fork until smooth. Heat the milk in the microwave until warm, about 30 seconds. Add milk and scallions to potato-butter mixture and mix until well blended. Season to taste with salt and black pepper.

To serve:
Arrange vegetables of your choice (we used steamed green beans with sesame) on a plate. Drizzle with honey. Pack mashed potato mixture into a small cup. Invert cup onto vegetables and use a fork to help get the mashed potatoes out. Artfully arrange a slice of roast meat (we used roast pork) on top of the potatoes and drizzle the whole thing again with honey.
