Great Passover-Friendly Meals

The Passover seder features some of the best of Jewish cooking-of all cooking. Who couldn’t eat brisket and potatoes for eight nights straight? That’s a question easy to ask just before Passover, but it’s hard to answer a few nights in. For those who are spending next week without leavening and are feeling a little desperate, I’ve combed our site to find BGSK’s best Passover-friendly meals that don’t resemble seder food.

**Great Passover-Friendly Meals**

Savory

1. Alex’s Roasted Chicken. Brisket is the seder mainstay, but a good roast chicken with potatoes is a welcome replacement as the week wears on.

2. Jordana’s Baked Spaghetti Squash with Ricotta and Tomato. Developed as a gluten-free alternative to pasta, this innovative vegetarian main makes the most of a pasta-like vegetable that is obviously flour-free.

3. Potato, Leek & Fennel Gratin. I realize that a dish of potatoes and cheese might not seem like dinner fare to some of you. But add a salad to ease up the richness, and you’ve got a vegetarian and satisfying meal.

4. Eggplant-Chard Frittata. Eggs have their place in matzoh brei, but they are more versatile than that. This filling frittata is great warm or room temperature.

5. Really Good Vegetable Soup. From-scratch vegetable stock cements this soup’s place in the veggie hall of fame. Pair it with buttered matzoh for a worthy Passover lunch.

6. Arugula Salad with Roasted Chicken. Salads are an easy Passover solution, but their appeal will wane as the bread-free days wear on. This salad wins with innovative flavors and a solid dose of protein.

7. Smoked Salmon and Dill Hash with Fried Eggs. Here again, potatoes step in to fill you up while bread is gone. Smoked salmon slices and fresh herbs spruce up the breakfast, lunch, or dinner hash.

Sweet

8. Almond Matzoh Toasts. Modeled after bostock, a brilliant French pastry based on day-old bostock, these sweet matzoh bites can be breakfast or dessert.

9. Walnut Passover Cake with Chocolate Whipped Cream. A favorite cake template just happens to be flour-free. This single-layer cake gets its flavor from toasted ground nuts and its height from tons of beaten eggs.

10. Matzoh Crunch. Better known as “matzoh crack,” brown sugar, chocolate, and butter transform our leavening-free cracker into a completely addictive treat. I’m loving these variations over at Design*Sponge.
